Ginger Loaf Cake

This brack is a great addition to any afternoon tea. Slice and slather with butter for a real treat

Ingredients

  • 125g butter
  • 350g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 3-4 tsp ground ginger
  • 100g light muscovado sugar
  • 225g golden syrup
  • 1 egg
  • 75ml milk

Instructions

  1. Grease and line a 900g loaf tin. Preheat the oven to 160C/310F/gas mark 3.
  2. Sift together the flour, baking powder, bicarbonate of soda and ground ginger. Set aside.
  3. Melt the butter, sugar and golden syrup in a small saucepan. Set aside to cool slightly.
  4. Beat the egg and milk together. Stir the cooled syrup into the dry ingredients, followed by the milk and beat well. Spoon into the tin and bake for about 1 ¼ hours, until just firm to the touch. Cool on a wire rack.
